Behind the enigma, a philosophy of high standards
The seemingly enigmatic name is actually a faithful expression of each cuvée’s identity: the first number indicates the postcode of its native terroir, and the second its vintage.
Pure Origine thus reveals a bold, uncompromising collection: the expression of carefully selected single plots, farmed organically, with grapes drawn from one and the same vintage. No blending, therefore, and an exclusive selection of the first pressing, known as the “cuvée”. No added sulphites, minimalist dosage: from vine to bottle, a highly demanding philosophy for cuvées of the highest calibre.
A bottle worthy of the nectar within
The packaging has been crafted in the same spirit as the wine: environmentally responsible every step of the way. Short plastic-free capsule, minimalist labels, without varnish or gilding, made of recycled paper, low-carbon cardboard box… All symbols of our respect for the environment.
From the heights of the Côte d’Or
Pure Origine 21/23 is part of the range’s ongoing exploratory approach. Behind the apparent enigma of its name, our new Pure Origine cuvée reveals a clearly defined identity: 23 marks its vintage, 21 the département of its parcel of origin, the Côte d’Or.
The cuvée comes from a single vineyard parcel planted at 400 metres above sea level, on clay-rich, stony soils resting on Comblanchien limestone: a landscape where pinot noir gains in tension and verticality.
After a selective pressing, of which only the cuvée fraction, the most suited to ageing, was selected, the fermentations were closely monitored, before ageing for five months on fine lees, in stainless-steel tanks. The second fermentation is followed by a fifteen-month ageing on laths, and a minimalist dosage of 4 g/L with no added sulphites, refining the wine’s balance.
Pure Origine 21/23 opens on a yellow hue with amber highlights, enlivened by a persistent mousse. The nose, expressive, evokes undergrowth, dried flowers and ripe pear. The palate unfolds with breadth, supported by moderate effervescence and a tangy acidic framework that extends the finish.
The signature of the Hautes Côtes appears in subtle smoky and mineral notes, extended by a hint of citrus.
Pure pairings
Its robust personality allows it to accompany characterful dishes, pâté en croûte, fine rillettes, mushroom risotto, as well as more generous dishes like Gaston Gérard-style chicken or a lamb tajine with mild spices.
