Grape varieties
The blending of Chardonnay, Pinot Noir and Aligoté gives this cuvée its distinctive character and unique personality.
Rarity
The rare cuvée is made exclusively with the vintage’s best wines.
Complementarity
It is drawn from six terroirs in Burgundy: Côte de Nuits, Côte de Beaune, Châtillonnais, Couchois, Mâconnais, and Beaujolais.
Ageing
Finally, time seals this complex blend. We choose our wines when they are young, still closed, and can stand the test of time! During this long ageing, they will gradually open up with notes of toast and a hint of minerality.
All our Perle Rares are aged for a minimum of two years and thus classified as "Eminent".
Gastronomic pairings
As an aperitif, soft textures go well: olive cake, flaked salmon, rillettes.
This Crémant de Bourgogne will also accompany your meal, especially if its moderate acidity is balanced with dishes in sauce, or if you play on its liveliness, as with beautiful slices of seared tuna. Or even a delicate fish such as grilled sea bass. But why not also with poultry?
An exceptionally generous year
The 2023 growing season will be remembered as a historic harvest for Louis Bouillot, marking the most abundant vintage ever recorded.
The vineyards produced grapes of outstanding quality and remarkable generosity. Harvested between August 29 and September 26, each parcel was picked at optimal ripeness, resulting in a rich, well-balanced and particularly expressive vintage.
A generous and expressive vintage Crémant
This 2023 Perle Rare captivates with its brilliant golden-yellow colour and abundant mousse. The expressive, fruitforward nose reveals notes of vineyard peach, apple and nectarine, enhanced by delicate toasted nuances. On the palate, the wine is complex and indulgent, combining ripe fruit flavours with hints of hazelnut and sourdough bread. The long, fruit-driven finish beautifully reflects the generosity and character of the 2023 vintage.
