The art of blending

Blending is one of the crucial stages in the production of our Crémants de Bourgogne. It determines the style, which we want to be generous, lively and fruity.

After the harvest and vinification period, our oenologist takes to the stage. As if conducting an orchestra, they assess each wine, select the most remarkable ones, and begin the creation of our Crémants de Bourgogne. The aromas, flavours and textures are meticulously orchestrated to achieve perfect harmony.

Like a perfumer’s nose, our tasting panel is made up of different basic wines. Together with our oenologist, the panel tastes and blends the wines to find the ideal match.

The cellar becomes our rehearsal room, where the basic wines practise their scales, exchanging nuances and intensities to create a symphony that will delight the taste buds. Each vat, like a section of instruments, contributes to the richness and complexity of the final outcome.
