Half a Century of Appellation
On 18 October 2025, the Crémant de Bourgogne appellation celebrated its fiftieth anniversary. Fifty years of history, passion and shared expertise between winegrowers, producers and lovers of Burgundy bubbles.
The industry and its key players marked the occasion with a series of events, notably at the Cité de la Gastronomie in Dijon, where the anniversary was celebrated at the Cave de la Cité and the Table des Climats, with the cuvées of our Maison in the spotlight. The festivities culminated in the Paulée de la Côte Chalonnaise on 18 and 19 October: a joyful gathering combining tastings, concerts and convivial celebrations of wine.

A Strong Link with Our History
For Louis Bouillot, this anniversary has a particularly special resonance. Founded in Nuits-Saint-Georges in 1877, our Maison was already producing fine Bourgogne Mousseux long before the official recognition of the appellation. The decree of 17 October 1975 establishing the AOC Crémant de Bourgogne merely formalised a know-how we had been practising for nearly a century. We witnessed the appellation’s birth, growth and rise to stand among the world’s great sparkling wines — a journey we are proud to have contributed to, generation after generation.

Fifty years on from its creation, Crémant de Bourgogne has never been more vibrant. White or rosé, Blanc de Blancs or Blanc de Noirs, vintage or terroir-driven, our appellation offers a wealth of expressions that we strive to reveal in each of our cuvées. Making Burgundy sparkle remains, more than ever, our vocation.

Flashback 1975: Our Anniversary Cuvée
To pay tribute to this half-century of effervescence, we created Flashback 1975, a limited-edition cuvée inspired by the year of the founding decree. A blend of 70% Chardonnay and 30% Pinot Noir from the Côte de Nuits and the Mâconnais, it has matured for over eight years on lees, developing a silky texture, fine effervescence and impressive aromatic depth.
Its Extra Brut dosage (5 g/l) highlights the wine’s purity and tension, combining notes of honey, sweet spice and dried fruit. Presented in a collector’s case with a retro design, Flashback 1975 embodies our deep attachment to the history of Crémant de Bourgogne as much as to its future.
