After the harvest and vinification comes a crucial stage in the creation of our Crémants de Bourgogne: blending. A moment guided by sensitivity, when tasting becomes a language and shapes the profile of our future cuvées.
The base wines from the new vintage are tasted one by one. Each reveals its own character: delicate freshness, fruity notes, tension, finesse... Under the guidance of our oenologist, the tasting committee composes the blends.
Together we taste, compare and refine the balance. Each cuvée is like an instrument in a symphony in the making, contributing its unique note to the final harmony.
This exercise in patience, precision and sharing, repeated each year by our tasting committee, is also a story of transmission — that of an art and expertise whose continuity ensures the enduring style of Louis Bouillot.
