Sprung from terroirs in the Hautes Côtes de Nuits, this 100% Pinot Noir cuvée perpetuates the Pure Origine spirit with its confident, uncompromising expressiveness.
Pure Origine 21/23 is true to the adventurous spirit of the range. The seemingly enigmatic name is actually a faithful expression of its identity: 23 is the vintage, and 21 the postcode of its native terroir: the Côte d’Or.
The wine comes from a single vineyard parcel planted at an altitude of 400 metres, on clay and pebble-rich soils over Comblanchien limestone: the sort of landscape that Pinot Noir loves, giving tensile, elevated wines.
After selective pressing, the most promising, ageworthy juices are separated from the rest and fermented under strict supervision, before ageing for five months over fine lees in stainless steel tanks.
Secondary fermentation is followed by fifteen months of ageing in racks, with deliberately minimalist dosage of 4g/l and no added sulphites, to fine-tune the wine’s innate balance.
Pure Origine 21/23 arrives draped in a yellow robe with flashes of amber, enlivened by a steady stream of bubbles. The expressive bouquet weaves in hints of undergrowth, dried petals and ripe pear. The palate is expansive, powered by those well-tempered bubbles and a tangy frame which allows the finish to fan out.
The hallmarks of the Hautes Côtes are apparent in the subtle smoky and mineral notes, enhanced by a dash of citrus zest. Its robust character make it a worthy match for bold flavours such as pâté en croûte, rillettes or mushroom risotto, as well as more generous fare such as Gaston Gérard chicken, or a lamb tagine with sweet spices.
