While we know it as a still wine, it is rare to drink a sparkling version of Chablis! However, it is Chablis that offers these very serene grapes!
The second Blanc de Blancs in the Grands Terroirs collection, this extra-brut expresses all the sought-after personality of the Chablis vineyards. The fresh, mineral, robust Chardonnay of an exceptional cuvée produced from a limestone terroir. The balance between the fresh attack and the powerful finish expresses the exceptional harmony of this wine for laying down.
With a river running through it...
Named after the river that runs through Chablis, the Serein, the wine blends several plots classified as villages in this unique northern Burgundy appellation. The soil contains small fossils that bear witness to the marine life here millions of years ago. Today’s land was yesterday’s seabed. We set foot on these famous fossilized oysters, oxygera virgula, which give a particular taste to the Chardonnay, an aroma of smoke, of stone, or what is sometimes called minerality!
A wine with a complex bouquet and a lively, generous palate, with roasted notes, reminiscent of the oak ageing, and a long, flavourful finish.
Naturally, the best combinations are those with land and sea: as an aperitif, with fish and seasonal vegetables, shellfish or, more daringly, with meat in sauce, Japanese cuisine, or goat's cheese, fresh or matured.
The finesse and character of a wine for cellaring
In 2008, the weather conditions forced the vines to draw on their resources. The difficult ripening nevertheless enabled the lively potential of the late harvest to be preserved. A fifth was aged in oak barrels for six months and then matured on the lees for an exceptional eight years. Its minimalist dosage exalts its full personality.
Yellow, lightly golden colour, fine bubbles, delicate foam. Rich nose, complex bouquet, with citrus, preserved lemon, oaky and toasted notes. Lively on the palate, beautiful minerality with vanilla and toast. Long, flavourful finish. A mineral wine for cellaring, with a strong personality.
