Crémant de Bourgogne Blanc de Blancs | Delicacy and character

La Vallée du Serein 2008 is an extra-brut blanc de blancs, expressing the personality of the Chablis region in a sparkling version. This crisp, mineral and powerful Chardonnay has produced an exceptional Crémant de Bourgogne, with a balanced, fresh attack and a long finish, giving a lovely harmony to a wine that will improve with age.

Its yellow, slightly golden hue is infused with fine bubbles and a delicate foam. The bouquet is rich and complex, with citrus notes such as lemon confit, with oaked overtones. In the mouth, it is taut with lovely minerality. The taste buds are regaled with vanilla and toasted notes, which bring a subtle touch of indulgence. The finish is full and long. La Vallée du Serein 2008 is a mineral cuvée designed for ageing, a great Crémant de Bourgogne with a strong personality.

Seafood or exotic combinations: Delicious as an aperitif, it will also go well with Japanese cuisine, fish accompanied with seasonal vegetables, or goat cheese, whether fresh or matured.

2008 was a vintage with tricky weather conditions. Harvesting did not start until the end of September, finishing in early October. These extreme conditions forced the vines to draw deep on their reserves and the soil. The fruit ripened very slowly due to the poor weather, but that allowed the potential tension in the wine to be conserved. Made from 100% Chardonnay, of which one-fifth was aged in oak for six months, La Vallée du Serein 2008 has great complexity, thanks to ageing on lees for an exceptional eight years and bottling with a minimal dosage, all of which enhances the expression of the terroir.

In 2008, the weather conditions forced the vines to draw on their resources. The difficult ripening nevertheless enabled the lively potential of the late harvest to be preserved. A fifth was aged in oak barrels for six months and then matured on the lees for an exceptional eight years. Its minimalist dosage exalts its full personality.
