Crémant de Bourgogne Blanc de Blancs | Richly crisp

La Vallée du Serein 2007 is a blanc de blancs extra-brut, which provides a clean expression of the personality of the Chablis soil through a sparkling version. This exceptional Crémant de Bourgogne is made exclusively from crisp, powerful, mineral Chardonnay. The balance between the vigorous attack and the punchy finish give a lovely harmony to this wine for ageing.

The wine is a golden yellow with fine bubbles. The nose is rich with floral and almond aromas, mingling with toasted and smoky notes. A touch of brioche in the mouth gives way to a long, structured finish with good minerality. The balance between the crisp attack and the sustained power make this Crémant de Bourgogne a delicious package, with subtle aromas that can accompany the finest of dishes.

A match for surf or turf: Goes well with fish or seafood, but also makes an audacious accompaniment to meat sauce with seasonal vegetables.

The 2007 vintage was very sunny, producing concentrated grapes and excellent wines. The fruit was hand-picked in the vineyards of the Serein Valley in the Chablis region, where the limestone-rich soils give rise to balanced white wines with mineral notes. Made from 100% Chardonnay, one-fifth of which was aged in oak for six months, La Vallée du Serein 2007 reaches a high degree of complexity thanks to ageing on lees for an exceptional six years, and a minimal dosage on bottling.
