Crémant de Bourgogne Extra-Brut | Power and vigor

A second vintage for this exceptional and remarkable cuvée that illustrates Louis Bouillot’s expertise in the art of blending. The successful fusion of six village plots, selected for their powerful white wines (Les Trois Saints) and their expressive reds (Dessus les Vermots and Grands Rayes-Blanc) with, for this version, an additional touch of Chablis minerality from the Serein Valley. This 2007 vintage is a complex, powerful wine, that offers infinite impressions on the tongue for ecstasy in the mouth!

A golden color with tinges of amber and a creamy, abundant foam. The nose is complex with a lovely bouquet recalling notes of honey, walnut, and certain fruits in alcohol. On the finish, it offers toasted and slightly oaky notes with aromas of ripe pear. In the mouth, the attack is lively and forthright, with magistral vinosity and richness carried through to a long finish.

Delicious pairings:
A velouté of mushrooms, veal scallops, and a hard cheese like a Comté aged for 24 months.

The 2007 vintage was a very sunny one where ripening was quick to happen. It produced ripe and concentrated grapes with which to compose this exceptional cuvée. Les Villages 2007 is the fruit of some painstaking work: The perfect balance of Burgundy’s two flagship varietals of Chardonnay and Pinot Noir, enhanced by particularly long ageing (including more than 12 years on laths), with six months in oak and an extra-brut dosage to allow these exceptional terroirs to shine through.
