Crémant de Bourgogne Blanc de Noirs | purity and power from Pinot Noir

Perle de Nuit expresses the full range of subtle fruit character of the Pinot Noir comprising this single-varietal wine. It really embodies all the delicacy of this variety, so typical of Burgundy’s great red wines. It is grown on two terroirs, le Couchois and les Hautes-Côtes-de-Nuits. These cooler, higher-altitude terroirs (400 metres above sea level) produce highly expressive grapes of strong typicity with good aromatic concentration, as well as lots of lively acidity – ideal for a vinification approach that’s as natural as possible (with no added sulphur).

Pale yellow in colour, with grey highlights and topped off by an airy mousse. The nose opens gradually on buttery, subtly creamy notes before reaching a climax on summer fruit like raspberry and damson. Persistent, mouth-filling and powerful with nice acidity on the finish. Fruit brandy notes add a further layer of complexity to the wine. Perle de Nuit with no added sulphur is a Crémant de Bourgogne that’s bursting with personality – just perfect for drinking with classic vegetable-based dishes.

This wine is produced from a single varietal, red grape Pinot Noir which produces white juice, made even better through a particularly painstaking vinification approach: gentle pressing cycles to treat the berries with the respect they’re due, juice press fractioning for top quality must, cold temperature settling and low temperature alcoholic fermentation in a vat really bring out the wine’s personality, especially its aromas. The absence of sulphur dioxide – also referred to as sulphites - enables its true character to run free. After secondary fermentation in the bottle, Perle de Nuit is aged on laths for over 18 months. This long period of ageing greatly enhances the wine and lends it real elegance. Lastly, the addition of a very small amount of dosage (extra-brut) conserves the very essence of the wine’s character.
