Crémant de Bourgogne Blanc de Noirs | Power and vigor

This Blanc de Noirs Crémant de Bourgogne is a gastronomic wine. Made exclusively from Pinot Noir grapes grown in Gevrey-Chambertin, it is powerful and expressive. This cuvée with its delicate bubbles and creamy color reveals a delicate nose with toasted, fruity notes. On tasting, it expresses its mainly clay terroir, and is fresh and complex on the tongue with a powerful finish.

It is deep yellow in color with hints of amber. The nose is complex, first revealing delicious notes of toast and walnuts, followed by delectable aromas of quince and acacia honey. In the mouth, it is lively, with surprising youthfulness. There are flavors of white-fleshed fruit, and suggestions of morello cherry and raspberry, and a powerful, long finish. This is a complex, gastronomic Crémant de Bourgogne, one that can be drunk throughout a meal, whether classical or refined.

Food and wine pairings: Serve as an aperitif, with roast chicken with morels, or a ballottine of langoustine with Comté cheese.

2007 was an unusual year: Winter was clement, spring was sunny yet stormy, and summer was at first cool and rainy, before giving way to some high temperatures and then an early harvest that began on 24 August. The grapes were hand-picked from the plot known as Grands Rayes-Blanc located in Gevrey-Chambertin, at the foot of the Combe de Lavaux. The village only produces fine reds, reputed for their power and long ageing potential. This Crémant de Bourgogne cleanly expresses the mainly clay terroir from which it hails, and which confers on it the possibility to be bottle-aged for eight years, after partial ageing in oak barrels. The wines rested in the bottle for a minimum of two months to allow the dosage to blend perfectly into the wine for a perfectly harmonious result.
