Crémant de Bourgogne Brut Rosé, from selected terroirs | sophisticated and noble

The grapes used in this sparkling rosé mostly come from our vineyard in the emblematic village of Molesme in the Châtillonnais, in northern Burgundy. It is just 2.5km from the Aube département and 9km from the Champagne-producing village of Les Riceys, in the heartland of monk Robert de Molesme, who founded the Abbey of Cîteaux in 1098. The label pays tribute to him with its miter and crosier, the man who would become St. Robert de Molesme and appear on the commune’s coat of arms.

Very fine bubbles add an extra touch of elegance to the wine’s pale pink color with hints of copper. Fairly short ageing preserves maximum freshness and its youthful and subtle aromas of redcurrant, crushed strawberry, and white cherry. In the mouth, the attack is crisp and fruity, with a sophisticated characterful balance, and a charming, utterly delicate finish.

Plentiful pairings: aperitifs, salmon à l’unilatérale, fresh cheeses like Délice de Pommard with blackcurrant buds, and strawberry soup.

Molesme enjoys a cool climate and has clay-limestone soil with lava outcrops that is perfectly suited to the Pinot Noir grape, making it the ideal location for the production of prodigious Crémant de Bourgogne wines. After the grapes are harvested in crates, the Pinot Noir grapes are left in contact with the juice to bring color and aromas. Chardonnay and Gamay grapes complete this subtly balanced cuvée. Splitting the juices, cold settling, and temperature-controlled fermentation preserves the character of this great wine, reinforced by ageing for 12-15 months.
