Perle de Jade, Louis Bouillot’s first organic cuvée! 

Perle de Jade is the first pearl from Louis Bouillot wines to sport this prestigious European label. The name evokes its organic quality and the preciousness of a top-flight cuvée. This beautifully-balanced Crémant de Bourgogne is a blend of vintages, varietals, and origins.

 

Perle de Jade has a lovely pale-yellow color with hints of green. This Crémant needs to be savored to reveal its secrets. On the nose, aromas of apple mingle with hints of bay and honeysuckle. These are followed by notes of toast and lime blossom. The nose is all about complexity and freshness. In the mouth, the tone is set by a lemony acidity, and very soon followed by breadth and body. Perle de Jade has three real aspects to its personality: minerality, complexity, and good keeping potential.


Spring combinations: ideal for an aperitif or drunk with a meal such as fish fillet and vegetables cooked in a bag.


Perle de Jade is made with Aligoté for vivaciousness, tempered by the smoothness of Chardonnay and underscored by the structure of Pinot Noir, and an invigorating touch of Gamay. The grapes come from the Hautes Côtes de Beaune and the Côte Chalonnaise, bringing a clear imprint of the terroir. Vinified according to Ecocert* specifications, each bottle is aged for one year on laths. A low dosage gives free rein to the wine’s forthright, lively, long yet delicate personality.
